Like many other people, for me the start of the new year means a re-dedication to eating healthy. I don’t have a lot of trouble making healthy eating choices for breakfast and I generally cook a well balanced nutritious dinner every night. But lunch time is tricky for me – my daughters are in afternoon preschool which means that our rush hour is around lunch time. This recipe for raspberry mango iced tea couldn’t be any easier – it’s simply brewed black tea that’s been lightly sweetened with mango juice and mixed with fresh fruit.

I most definitely have more energy throughout the day when I take a quick break from my busy schedule to enjoy an elevAte salad. Mango Iced Tea

This recipe for raspberry mango iced tea is a light and refreshing drink that only takes 5 minutes to make.

Ingredients

  • 6 cups of water
  • 6 black tea bags (I used English breakfast tea)
  • 2 cups of mango nectar or juice
  • honey to taste (optional)
  • 1 1/2 cups of fresh mango slices
  • 2 cups of raspberries
  • mint sprigs for garnish (optional)

Instructions

  • Bring the water to a boil; add the tea bags and steep for 3-5 minutes or until desired level of strength.
  • Stir in the mango nectar. Add honey to taste if desired.
  • Pour the tea into a pitcher. Add the mango slices, reserving a few for garnish if desired.
  • Chill the tea in the refrigerator for at least one hour.
  • Stir in the raspberries right before serving. Pour into glasses with ice and garnish with reserved mango slices and mint sprigs if desired.

    I’ve never seen these salads but I’m am SO looking for them now. I get so busy with work that many times I end up just grabbing a yogurt at 4pm. These would be so perfect to keep stocked in the fridge for those crazy days. The tea looks absolutely delish!
