There’s no better lunch than a superfood salad – I’m sharing my favorite varieties along with a super simple recipe for mango iced tea.

Like many other people, for me the start of the new year means a re-dedication to eating healthy. I don’t have a lot of trouble making healthy eating choices for breakfast and I generally cook a well balanced nutritious dinner every night. But lunch time is tricky for me – my daughters are in afternoon preschool which means that our rush hour is around lunch time. By the time I get the kids fed and off to school, it’s time for me to cram as much work time as I can into a 2 hour period before I go pick them up. Often times that means I grab whatever is quick and convenient for lunch, regardless of the health factor (or lack thereof). All of that has changed now that I’ve discovered elevAte salads. These salads are the ultimate quick and easy lunch, they’re packed full of nutritious ingredients and they come in 8 flavor varieties.
I love that this superfood salad comes in individual portions – the greens and toppings are separated inside the bowl and can be tossed together at the last minute for maximum freshness. These salads even come with a fork, so they’re perfect to take on the go!
I appreciate that elevAte salads come in so many different flavors – there’s something for everyone, even if you’re gluten free, vegan or have other dietary needs. Each salad comes with a variety of unique toppings including whole grains, nuts and seeds, beans and dried fruit.
I keep a stack of elevAte salads in the fridge, that way I have an instant lunch that’s both good for me and delicious. These salads are available nationwide at Walmart.
eleVate is currently running a Happy & Healthy New Year Sweepstakes where you can enter daily to win some amazing prizes like gift cards, fitness gear, a gym membership or an Apple watch – definitely some great motivation to stay on track!
To make lunch time a little more special I like to spend 5 minutes in the morning to brew up some iced tea to drink with my salad. The light and fruity nature of this raspberry mango iced tea makes it the perfect companion to elevAte salads.
This recipe for raspberry mango iced tea couldn’t be any easier – it’s simply brewed black tea that’s been lightly sweetened with mango juice and mixed with fresh fruit.
I most definitely have more energy throughout the day when I take a quick break from my busy schedule to enjoy an elevAte salad. I feel like it’s been so much easier to stick to my new years resolutions when I don’t have to spend hours in the kitchen processing produce just to make a simple salad. Because who has time for that? Not me! How are you doing with your resolutions this year? I’d love to hear about the changes you’ve pledged to make in 2016!
Mango Iced Tea
- 6 cups of water
- 6 black tea bags (I used English breakfast tea)
- 2 cups of mango nectar or juice
- honey to taste (optional)
- 1 1/2 cups of fresh mango slices
- 2 cups of raspberries
- mint sprigs for garnish (optional)
- Bring the water to a boil; add the tea bags and steep for 3-5 minutes or until desired level of strength.
- Stir in the mango nectar. Add honey to taste if desired.
- Pour the tea into a pitcher. Add the mango slices, reserving a few for garnish if desired.
- Chill the tea in the refrigerator for at least one hour.
- Stir in the raspberries right before serving. Pour into glasses with ice and garnish with reserved mango slices and mint sprigs if desired.
