I like to have plenty of fun drink recipes on hand to offer my guests during the summer months. Some of my favorite options include vodka punch, a pomegranate margarita, champagne punch and this easy raspberry cocktail.

A classic mojito is cocktail perfection, but sometimes I like to change things up a bit and add some fresh fruit to the mix! Raspberry mojitos are a great addition to any gathering, and they take just minutes to make.

To make this recipe, you will need white rum club soda, raspberries, sugar, water, lime juice and mint.

How Do You Make A Raspberry Mojito?

Start by mixing sugar with hot water to make a simple syrup. Place the syrup and mint leaves in a cocktail shaker, then use a muddler to crush the mint. Add the berries, and muddle again to smash the raspberries. Pour ice, rum and lime juice into the shaker. Seal the cocktail shaker, then shake to combine. Strain the raspberry mixture into a glass of ice. Add club soda, and stir gently to combine. Garnish with extra lime, fresh berries and lime wedges, then serve.

Tips For The Perfect Drink

  • This recipe makes a single mojito. You can easily make mojitos for a crowd by simply changing the number of servings in the recipe card. The ingredient amounts will automatically recalculate.
  • You can use frozen raspberries instead of fresh, just thaw them first. Frozen berries are often more tart than fresh, so you also may need to add a little more sugar.
  • Using the strainer on the cocktail shaker will still allow some of the raspberry seeds to go into the serving glass. If you’d like to prevent any seeds in your mojito, strain the raspberry and rum mixture through a fine mesh sieve before you place it in your glass.
  • If you don’t have a cocktail shaker, use a mason jar instead, then pour the mixture into a strainer before it goes into the glass.

Ingredients 

  • tablespoons granulated sugar
  • tablespoons hot water
  • 8 mint leaves
  • ¼ cup fresh raspberries
  • 1 ounce lime juice
  • ounces white rum
  • ounces club soda
  • mint sprigs, raspberries and lime slices for garnish

Instructions 

  • Place the sugar and hot water in a bowl. Stir until the sugar dissolves.
  • Place the mint leaves and sugar syrup in the bottom of a cocktail shaker. Use a muddler and muddle everything together until the mint leaves are crushed.
  • Add the raspberries and muddle again to smash the berries.
  • Add ice on top of the raspberry mixture.
  • Pour the lime juice and rum into the shaker.
  • Seal the shaker and shake well to combine.
  • Fill a glass 2/3 of the way full with ice. Strain the raspberry mixture into the glass. Add the club soda. Stir to combine.
  • Serve immediately with mint, limes and raspberries for garnish.
