Raspberry Mojito

This raspberry mojito is a unique and refreshing blend of berries, rum, lime juice, mint and club soda. An easy and elegant cocktail offering!

Ingredients

  • tablespoons granulated sugar
  • tablespoons hot water
  • 8 mint leaves
  • ¼ cup fresh raspberries
  • 1 ounce lime juice
  • ounces white rum
  • ounces club soda
  • mint sprigs, raspberries and lime slices for garnish

Instructions

  • Place the sugar and hot water in a bowl. Stir until the sugar dissolves.
  • Place the mint leaves and sugar syrup in the bottom of a cocktail shaker. Use a muddler and muddle everything together until the mint leaves are crushed.
  • Add the raspberries and muddle again to smash the berries.
  • Add ice on top of the raspberry mixture.
  • Pour the lime juice and rum into the shaker.
  • Seal the shaker and shake well to combine.
  • Fill a glass 2/3 of the way full with ice. Strain the raspberry mixture into the glass. Add the club soda. Stir to combine.
  • Serve immediately with mint, limes and raspberries for garnish.

Notes

  1. This recipe makes a single mojito. You can easily make mojitos for a crowd by simply changing the number of servings in the recipe card. The ingredient amounts will automatically recalculate.
  2. Using the strainer on the cocktail shaker will still allow some of the raspberry seeds to go into the serving glass. If you'd like to prevent any seeds in your mojito, strain the raspberry and rum mixture through a fine mesh sieve before you place it in your glass.
