You can never have too many holiday drink recipes! When I’m entertaining, I offer fun and festive cocktails like a blood orange margarita, cranberry Moscow mule, Christmas sangria and this colorful Jack Frost drink.

Everyone expects classic winter flavors at holiday party cocktails like apple, cranberry and pomegranate. This Jack Frost cocktail is a tropical delight that’s an easy and unexpected addition to any Christmas party.

Jack Frost Cocktail Ingredients

To make this recipe, you will need ice, coconut rum, pineapple juice, coconut cream, blue curacao, light corn syrup and shredded coconut.

How Do You Make A Jack Frost Cocktail?

Pour corn syrup onto one small plate, and shredded coconut onto a second plate. Dip the rim of each of 4 glasses into the corn syrup, then into the coconut. Turn the glasses upright. Place the ice, rum, pineapple juice, coconut cream and blue curacao in a blender. Blend until smooth and thick. Divide the drink evenly between the glasses, then serve immediately.

Tips For The Perfect Drink

  • Finely shredded coconut works best for the rim because it will stick better. You can use either sweetened or unsweetened coconut.
  • Use a high powdered blender to make sure you end up with a completely smooth drink.
  • I prefer to use fresh pineapple juice from the refrigerator area for the best flavor.
  • Cream of coconut is a sweetened coconut cream sold in the mixers area of the grocery store. It is not the same as coconut milk or coconut cream, so it’s important to make sure you specifically buy cream of coconut.

Flavor Variations

While this Jack Frost cocktail is fabulous as-is, you can change up the ingredients to customize the flavors to your tastes.

  • Alcohol: You can use regular rum instead of coconut rum. It’s also fine to use a regular vodka or coconut vodka in place of the rum.
  • Garnishes: Feel free to add some garnishes such as maraschino cherries, mint sprigs or fresh pineapple.
  • Mixed Drink: If you don’t want a frozen blended drink, simply place all the ingredients in a cocktail shaker with ice. Shake to combine, then strain the drink into cups full of ice.

Ingredients 

  • 1 cup pineapple juice
  • ½ cup blue curacao
  • ½ cup coconut rum
  • ½ cup cream of coconut
  • 4 cups ice
  • ¼ cup shredded coconut
  • 2 tablespoons light corn syrup

Instructions 

  • Pour 2 tablespoons of corn syrup onto a small plate. Dip the rim of a glass in corn syrup.
  • Pour the coconut onto another plate, then place the rim of the glass on the coconut and turn the glass to coat the rim.
  • Repeat the process with the remaining 3 glasses.
  • Add the pineapple juice, blue curacao, coconut rum, cream of coconut and ice to a blender. Blend until smooth.
  • Divide the drink evenly between the 4 glasses, then serve immediately.

Notes

  1. Use a high powered blender for the best results.
  2. Finely shredded coconut produces the nicest looking rims.
  3. Feel free to add more garnishes to your drink such as mint sprigs, pineapple wedges or a maraschino cherry.
