The ingredients for this recipe are a simple blend of long grain rice, olive oil, juice from limes, fresh cilantro, garlic, cumin, salt and pepper.

How do you make cilantro lime rice?

Start by cooking the rice in a little olive oil until it’s lightly toasted. Next, add fresh garlic and cook for one more minute. Add cumin, water, salt and pepper, then bring the mixture to a boil. Cover the pot, then cook until the rice is tender. Stir in fresh cilantro and lime juice, then fluff the cooked grains with a fork and serve.

Ingredients 

  • 1 tablespoon olive oil
  • 1 1/2 cups long grain white rice uncooked
  • 2 teaspoons minced garlic
  • 1 teaspoon ground cumin
  • 3 cups water
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons lime juice
  • 1/3 cup cilantro leaves chopped
  • cilantro sprigs and lime wedges for garnish optional

Instructions 

  • Heat the oil in a large pot over medium heat.
  • Add the rice and cook for 1-2 minutes or until lightly toasted. Add the garlic and cook for one minute, stirring constantly.
  • Add the cumin, water, salt and pepper. Bring the pot to a boil.
  • Cover the pot and turn the heat down to low. Simmer for 15 minutes or until rice is tender.
  • Uncover the pot, then stir in the lime juice and cilantro. Fluff the rice with a fork.
  • Garnish with cilantro sprigs and lime wedges if desired, then serve.
