Hamburger steak topped with mushroom gravy and chopped parsley.

Whenever I find myself with a package of ground beef in the fridge and no plans on what to make for dinner, I turn to hamburger steak. This hearty meal can be whipped up in no time at all, and it’s always a hit with both adults and kids alike.

How do you make hamburger steak?

The first step in this recipe is to prepare the beef patties. In a bowl combine ground beef, bread crumbs, minced onion, an egg and seasonings. Shape that meat into patties and cook the patties in a pan until browned. When the patties are done, remove them and make the gravy. The gravy starts with cooking mushrooms and onions in a pan. Cook a little garlic in the pan and then add flour. Cook the flour while whisking it and add beef broth. Simmer and stir the sauce until it thickens and becomes smooth. Add some Worcestershire sauce and soy sauce and the gravy is done. Place the meat in the gravy so the patties can absorb the flavor, then serve and enjoy.

Tips for the best hamburger steaks

  • I use 90% lean ground beef. It has plenty of flavor but is not overly greasy. You can also use ground turkey if you prefer.
  • I like the rich, earthy flavor of cremini mushrooms in this dish, but white button mushrooms or any variety of wild mushrooms would also work nicely.
  • The hamburger steak mixture can be mixed together up to 8 hours in advance.
  • The leftovers of this dish can be stored for up to 3 days in the refrigerator, or frozen for up to 2 months.

Hamburger Patty variations

While these steaks are a classic rendition of this recipe, you can add other ingredients to customize the flavors to your taste.

  • Cheese: Try adding 1/2 cup of shredded cheddar, mozzarella or Monterey Jack cheese to the beef mixture.
  • Veggies: You can add 1/3 cup of grated zucchini or carrots to the beef mixture for a boost of added nutrition. You can also add other vegetables to the gravy such as bell peppers.
  • Bacon: Add a sprinkle of cooked, crumbled bacon over the finished dish for an added savory and smoky flavor.

HOW DO YOU CLEAN MUSHROOMS?

The best way to clean cremini mushrooms is to use a damp paper towel to gently rub any dirt off of each mushroom. Make sure not to rub off the skin of the mushrooms. You can also rinse your mushrooms in a colander, but only give them a quick rinse; do not soak them in water.

  1. OMG thank you for this recipe! I grounded the mushrooms into a paste so my vegetable-hating relative had no idea they were even in the gravy and it was a HIT! What an overall delicious and hearty meal. Will definitely make again!

Didn’t have breadcrumbs so used crushed H.E.B. Streetcorn chips. FANTASTIC! Definitely a ‘keeper recipe.’

    1. I blitz some oatmeal since I never have breadcrumbs- I’ve used this recipe with so many variations and it rocks – thinking of adding some
red wine to it tonight – wish me luck!

  3. One of the best recipes I’ve made in a long time! Everyone in our family cleaned up their plates! So good and thanks for sharing.

  4. Awesome recipe! I didn’t have any onions so I used onion powder and I forgot to put the Worcestershire and soy sauce in the gravy at the end but it was still delicious! Can’t wait to make it again and follow the recipe perfectly. I bet it would be even more delicious. I had it with roasted asparagus.

I made this for dinner tonight. My hubby told me how good it was several times. I don’t make many recipes more than once, but I’ll come back to this one.

Great, easy recipe – doubled for another meal. Instead of Italian herbs I used herbs de Provence, deglazed the pan with red wine and used some in the sauce along with a little tarragon. The original recipe would be great, but was batch cooking and had already made Italian meatballs. Family said “yum – make this again.” It’s also pretty low carb which is great.

We have made this recipe several times now. Each time it has been delicious. Used olive oil in place of butter and no onions because of a allergy.. Thank you. Think it would be good with chicken both as well.

As my husband put it after one bite, “Wow! This is on point!” Haha! Very delicious and best rendition of hamburger steaks and gravy recipe I’ve tried yet! I put the pan I used to cook the hamburgers to side side to cool down after cooking and covered with a lid–I think this made it finish the steaks perfectly. The steaks didn’t crumble apart and the meat was so tender and juicy! Must do again! Adding to the books without a second trial

I don’t cook. Ever. Like maybe once a year, and usually it’s pretty mediocre at best. This turned out amazing. Super simple to do, and took me around 1 hr total time, as I am slow at preparing. My wife could not believe I made my own gravy, nor that it was as good as it was. Thanks so much for making a simple, easy to follow recipe. I hope to get much better at this cooking thing. I really enjoyed it.

  15. Can you please tell me at what temperature can I bake the pstties? Do you recommend covered or uncovered?
    Thanks, Joan

    1. I’ve never baked this recipe so I’m not sure how it would turn out. I’d guess that it would work at 375 degrees F for about 15-20, but that’s just an estimate.
