I always have a container of ground beef in my freezer for quick and easy meals including cheesy hamburger casserole, one pot homemade hamburger helper, hearty hamburger steak with mushrooms, and creamy ground beef stroganoff.

Beef stroganoff is a comfort food classic for good reason. It’s simple to make, full of flavor and is great for a chilly winter night. This ground beef stroganoff cooks in a fraction of the time as the traditional version, but still has all the same great flavors.

HOW DO YOU MAKE GROUND BEEF STROGANOFF?

Start by browning ground beef in a pan until it is cooked through, then remove the beef from the pan and cover it. Prepare the sauce by cooking onions, mushrooms and garlic with butter in the pan. Stir flour into the veggies and let it cook for a minute to help thicken the sauce. Next, add beef broth and seasonings to the pan. After the sauce has time to simmer and thicken, add sour cream and the ground beef. Serve the stroganoff over egg noodles with a sprinkle of parsley on top, then enjoy!

TIPS FOR THE BEST GROUND BEEF STROGANOFF

  • I typically use 90% lean ground beef. It’s flavorful but doesn’t produce a lot of excess grease. If you’re using meat with a higher fat content, you’ll want to drain the grease from the pan after the meat is cooked.
  • In my opinion, cremini mushrooms work best in this dish as I find they have more flavor than button mushrooms.
  • This sauce works best with full fat sour cream. Low fat dairy products can sometimes separate when exposed to heat. No sour cream on hand? Try a little heavy cream instead.
  • Ground beef stroganoff will stay fresh in the refrigerator for 3 days. I don’t recommend freezing it as the sauce may separate when thawed.
  • I like the fresh flavor and color that chopped parsley adds to the dish. If you don’t have parsley on hand, green onions would also be a good option.

My recipe contains other international elements including Worcestershire sauce from England and paprika from Hungary for maximum flavor.

Flavor variations

This dish is fabulous as-is, but you can change up the ingredients to customize the flavors to your tastes.

  • Protein: No ground beef on hand? Ground turkey or ground pork will also work just fine. You can even use diced chicken thighs.
  • Vegetables: While cremini mushrooms are a classic choice, you can use other types of mushrooms such as button, portobello or chanterelle. You can also add more vegetables such as broccoli or spinach, which are delicious albeit less traditional choices.
  • Sauce: Feel free to amp up the sauce by making it extra creamy with a splash of heavy cream or 1-2 ounces of cream cheese.

Ingredients 

  • 3 tablespoons butter
  • 1 pound ground beef I use 90% lean
  • 1 1/4 teaspoons salt divided use
  • 1/4 teaspoon pepper
  • 1/2 cup yellow onion finely diced
  • 8 ounces cremini mushrooms sliced
  • 2 teaspoons garlic minced
  • 3 tablespoons flour
  • 1 1/2 cups beef broth
  • 1 1/4 teaspoon sweet paprika
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon Worcestershire sauce
  • 3/4 cup sour cream full fat
  • 12 ounces egg noodles
  • 2 tablespoons chopped parsley

Instructions 

  • Cook the egg noodles in salted water according to package directions.
  • Heat 1 tablespoon of butter in a large pan over medium high heat.
  • Place the beef in the pan and cook for 4-5 minutes, breaking up the meat into small pieces with a spoon or spatula. Season with 1 teaspon of salt and 1/4 teaspoon of pepper.
  • After the meat is cooked through, remove it from the pan and place on a plate. Cover with foil to keep warm.
  • If there is excess grease in the pan from the beef, drain it off.
  • Melt the remaining 2 tablespoons of butter in the pan. Add the onions and mushrooms. Cook for 5-7 minutes, stirring occasionally, or until tender and browned. Season the vegetables with 1/4 teaspoon salt.
  • Add the garlic and cook for 30 seconds.
  • Add the flour to the pan, and stir to coat the vegetables. Cook for 1 minute, while continuing to stir.
  • Add the beef broth, paprika, Italian seasoning and Worcestershire sauce to the pan, stirring well. Cook for 3-4 minutes or until sauce is thickened.
  • Stir in the sour cream. Add the ground beef back to the pan and cook for 2-3 minutes until the meat is heated through.
  • Top the stroganoff with parsley, then serve with the egg noodles.
