This bacon wrapped dates recipe starts with large Medjool dates. Cut each date open and remove the pit. Fill the dates with creamy goat cheese, then wrap each date in a slice of bacon and secure the bacon with a toothpick. Brush the dates with maple syrup. Place the dates on a baking sheet or sheet pan. Bake them until the bacon turns golden brown. Sprinkle with parsley, then serve immediately and enjoy.
Tips For The Perfect Dates
- Do not use thick cut bacon for this recipe, it will take much longer to cook.
- You can serve your dates with the toothpicks intact, or remove the toothpicks for a more elegant presentation.
- Be sure to turn your bacon wrapped dates occasionally as they cook so that the bacon will crisp up on all sides. If you don’t want to turn the dates, you can bake them an oven safe wire rack on a sheet pan. A wire rack allows heat and air to reach the underside of the dates.

- You can usually find Medjool dates near the produce section of your grocery store.
- Feel free to assemble your dates up to 8 hours before you plan to bake them.

Ingredients
- 20 Medjool dates pits removed
- 6 ounces goat cheese softened
- 10 slices bacon cut in half
- 1/4 cup maple syrup
- cooking spray
- 1 tablespoon chopped parsley
Instructions
- Preheat the oven to 400 degrees F. Coat a sheet pan with cooking spray.
- Use a small spoon or a piping bag to stuff each date with about 1 teaspoon of goat cheese. Press each date shut.
- Wrap each date in a piece of bacon and secure with a toothpick.
- Brush the maple syrup all over the wrapped dates.
- Bake for 15-20 minutes, turning occasionally, until bacon is browned and crispy.
