Mushroom Steak Sauce

This mushroom steak sauce is sauteed mushrooms in a savory brown sauce enriched with butter. This mushroom sauce makes the absolute best topping for steak, and is also great served over chicken, pork and seafood.

In my house mushrooms are often on the dinner table, whether they’re grilled, roasted or served up as a delicious steak sauce.

I love a good steak, but you know what turns a good steak into a great steak? A generous spoonful of mushroom steak sauce on top! This mushroom sauce is super easy to make, and will make your steaks taste like they came from a restaurant.

How do you make mushroom steak sauce?

This sauce starts with plenty of fresh sliced mushrooms, which are cooked in butter until golden brown. Garlic is added for flavor, and flour is used for the thickening agent. The next step is to add beef broth, Worcestershire sauce and pan drippings from your cooked steak. After the sauce has thickened, stir in a little more butter, then pour it over your steak and enjoy.

Tips for mushroom steak sauce

  • I cut my mushrooms into thick slices because I find them easier to eat that way, but you can cut your mushrooms in half if you prefer. Just be sure to adjust the cooking time accordingly.
  • The mushrooms will release a lot of liquid as they cook. If you wait patiently, that liquid will evaporate off and when that happens, the mushrooms will get that great caramelized and browned exterior.
  • I add the garlic towards the end of the cooking time so that it doesn’t burn.
  • I typically add a sprinkling of fresh parsley to garnish my mushroom sauce, but other great options are dill, chives or thyme leaves.
  • This recipe calls for button mushrooms, but you can substitute other types of mushrooms such as cremini, portobello, shiitake or oyster.

HOW DO YOU CLEAN MUSHROOMS?

The best way to clean mushrooms is to use a damp paper towel to gently rub the dirt off of each mushroom. You can also rinse your mushrooms in a colander, but be sure to rinse them briefly; do not soak them in water.

MUSHROOM STEAK SAUCE VARIATIONS

This is a basic recipe, but you can absolutely add other ingredients to customize your sauce to your taste!

  • Spicy: Add 1/4 teaspoon crushed red pepper flakes.
  • Creamy: Add 2 tablespoons of heavy cream to the finished sauce.
  • Cheese: Stir in 1/4 cup grated parmesan, fontina or white cheddar cheese before serving.
  • Onions: Add 1 thinly sliced yellow onion when you put the mushrooms in the pan to cook.

This sauce is not just for steak – try it over grilled pork chops, roasted chicken, or even as a gravy for mashed potatoes! No matter how you use your mushroom sauce, it’s bound to be a big hit.

Ingredients

  • 4 tablespoons butter divided use
  • 16 ounces sliced mushrooms
  • 1 1/2 teaspoons garlic minced
  • 2 tablespoons flour
  • 1 1/2 cups beef broth
  • 1 1/2 tablespoons Worcestershire sauce
  • 2 tablespoons pan drippings from cooked steak optional
  • salt and pepper to taste
  • 1 tablespoon chopped parsley

Instructions

  • Melt 2 tablespoons of butter in a large pan over medium high heat. Add the mushrooms and season with salt and pepper to taste.
  • Cook for 5-7 minutes or until mushrooms have softened and are browned. Add the garlic and cook for 30 seconds. Stir in the flour.
  • Slowly whisk in the beef broth, Worcestershire sauce and pan drippings. Bring to a simmer and cook until just thickened. Stir in the remaining 2 tablespoons of butter until melted.
  • Sprinkle with parsley, then spoon the sauce over steak or your choice of protein.

    Absolutely delicious. I subbed some cabernet for some of the beef broth. Didn’t have drippings as we grilled our steaks outdoors so subbed some Better Than Bullion roasted beef flavor to taste.

    Soooo good and savory. We always just do shrooms in Worcestershire and I am bored with them. These are fab! Grilling filets so no pan sauce but wonderful without. Love them!
