Chicken is a staple for crock pot cooking, but did you know that pork chops are also a perfect protein for the slow cooker? These honey garlic pork chops come out so tender and flavorful that they’ll be sure to find a place on your regular dinner menu rotation.

How to make honey garlic pork chops

For this recipe you’ll want to use thick cut boneless pork chops. If you use a thin pork chop, you should reduce the cooking time so that they don’t dry out. My pork chops were about 1 1/2 inches thick. I prefer to brown my pork chops before I add them to the slow cooker, it just adds so much more flavor. If you’re in a hurry you can skip that step and the chops will still be delicious.

The sauce is made with ketchup, soy sauce, honey and garlic. At the end of the cooking process, a little cornstarch gets added to thicken the sauce. Be sure to serve your honey garlic pork chops over mashed potatoes or with rice or bread to soak up that amazing sauce!

I add a little chopped parsley at the end for a fresh flavor. If you don’t have parsley on hand, you can omit it, or substitute sliced green onions.

Ingredients 

  • 6 thick cut boneless pork chops
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 2 teaspoons minced garlic
  • 1/2 cup ketchup
  • 1/3 cup low sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons cornstarch
  • 2 tablespoons chopped parsley

Instructions 

  • Heat the oil in a pan over high heat. Season the pork chops generously with salt and pepper on both sides. 
  • Cook the pork for 4-5 minutes on each side until deep golden brown. 
  • Add the pork chops to the slow cooker.
  • NOTE: you can skip the browning process if you prefer and simply season the pork chops with salt and pepper then add them to the slow cooker.
  • In a small bowl, whisk together the garlic, ketchup, soy sauce and honey. Pour the sauce over the pork chops.
  • Cover the slow cooker and cook on LOW for 4 hours.
  • In a small bowl, mix the cornstarch with 1/4 cup cold water. Add the cornstarch mixture to the slow cooker.
  • Cook for 1 more hour or until sauce has just thickened and pork chops are tender. Sprinkle with parsley and serve.

Notes

  1. Boneless skinless chicken thighs can be substituted for pork chops.
  2. You can add some sriracha or chili flakes if you want a spicier meal.

    1. The cornstarch thickens the sauce, and it’s activated by the heat of the crock pot. I’d still recommend cooking that last hour so that the cornstarch has time to properly thicken the sauce.

  1. I’m assuming this has or leans towards a teriyaki type flavor based on the ingredients? Serve this with rice, or noodles? I was just tasked with all the cooking in my house and have been making things like this ( making this tomorrow as it looks delicious) but having a hard time coming up with things to eat with it? White rice maybe? Suggestions welcomed.

    1. Do not use baking powder, it will not thicken the sauce and it will not taste good! I’d just omit the corn starch.

  3. I was hoping to make this ahead of time and freeze for in my RV. I was going to mix in freezer bag so all I ha d to do was thaw and throw in crockpot to cook. Is this possible and if I sear meat and then mix ingredients can I freeze before fully cooking? Thank you

    1. I wouldn’t sear the meat in this case, I’d just combine the raw pork chops with the sauce ingredients and freeze!

    1. You could use Worcestershire but I’d use less, probably about 2 tablespoons, because the flavor is a lot stronger than soy sauce!

  6. Hello, I am going to try this recipe today, however I have a question! Don’t slow cookers usually require to be filled half with a liquid? Is the sauce going to be enough or is it all going to stick to the bottom and burn?

    1. I’d just sear the pork chops, pour the sauce over the top, then bake at 400 degrees F for 10-15 minutes or until a thermometer registers at least 145 degrees F.

  8. Hello, so I have very thin pork chops. Is this a recipe still worth doing? They’re about an inch thick or maybe a tiny bit thinner. Also I don’t have cornstarch. Can anything be replaced for that? Would wine be a good mixture?

    1. It should be fine, just reduce the cook time by an hour. Cornstarch is used to thicken the sauce, so you can omit it but the sauce will be thinner!

  9. I plan on making this for dinner tonight but using bone-in pork chops. They are still thicker cut. Will these work the same as boneless?

    1. You can make the sauce the night before, but I wouldn’t sear the chops ahead of time because they’ll still be raw in the middle.
