Chicken is a staple for crock pot cooking, but did you know that pork chops are also a perfect protein for the slow cooker? These honey garlic pork chops come out so tender and flavorful that they’ll be sure to find a place on your regular dinner menu rotation.

How to make honey garlic pork chops

For this recipe you’ll want to use thick cut boneless pork chops. If you use a thin pork chop, you should reduce the cooking time so that they don’t dry out. My pork chops were about 1 1/2 inches thick. I prefer to brown my pork chops before I add them to the slow cooker, it just adds so much more flavor. If you’re in a hurry you can skip that step and the chops will still be delicious.

The sauce is made with ketchup, soy sauce, honey and garlic. At the end of the cooking process, a little cornstarch gets added to thicken the sauce. Be sure to serve your honey garlic pork chops over mashed potatoes or with rice or bread to soak up that amazing sauce!

I add a little chopped parsley at the end for a fresh flavor. If you don’t have parsley on hand, you can omit it, or substitute sliced green onions.

Ingredients 

  • 6 thick cut boneless pork chops
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 2 teaspoons minced garlic
  • 1/2 cup ketchup
  • 1/3 cup low sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons cornstarch
  • 2 tablespoons chopped parsley

Instructions 

  • Heat the oil in a pan over high heat. Season the pork chops generously with salt and pepper on both sides. 
  • Cook the pork for 4-5 minutes on each side until deep golden brown. 
  • Add the pork chops to the slow cooker.
  • NOTE: you can skip the browning process if you prefer and simply season the pork chops with salt and pepper then add them to the slow cooker.
  • In a small bowl, whisk together the garlic, ketchup, soy sauce and honey. Pour the sauce over the pork chops.
  • Cover the slow cooker and cook on LOW for 4 hours.
  • In a small bowl, mix the cornstarch with 1/4 cup cold water. Add the cornstarch mixture to the slow cooker.
  • Cook for 1 more hour or until sauce has just thickened and pork chops are tender. Sprinkle with parsley and serve.

Notes

  1. Boneless skinless chicken thighs can be substituted for pork chops.
  2. You can add some sriracha or chili flakes if you want a spicier meal.

    I had some thick cut pork chops that I bought from a big box store. First time I made them with a recipe I had used for years they were tough and flavorless. I knew I had to find a different recipe for the remaining chops I had frozen. I kept pushing them aside in the freezer for months. Came across your recipe yesterday and gave them a try. YUM YUM!!!! This was easy to make and I had all ingredients on hand without having to make a trip to the store. I served with French cut green beans and broccoli.     This is actually the first time I’ve ever commented on a recipe but I thought this one deserved its praise. This is a family favorite in our house. My two year old eats every last bite and my husband gets excited when I tell him what I’m making. Definitely worth a try. Personally I like a lower sodium content so I replaced soy sauce with Worcestershire but that’s the only adjustment I would make otherwise perfect.

    Hi Sarah, I normally don’t leave comments…..however this recipe demands it! These are the best tasting and the most tender pork chops I have ever made. My chops are always tough no matter how I cook them, (and if I say so myself I’m a pretty decent cook) The sauce is amazing and ads a delicious flavor twist to the same old pork chop flavor! I will be using the sauce for chicken also. My family and friends just LOVED this dish! Its now a favorite in our house! Thank you!!

    1. You could just cook them on the stovetop, sear in a little olive oil until cooked through, then pour the sauce over the top and bring to a simmer for a few minutes!

    LOVE LOVE LOVE this recipe, I have made it several times and it always turns out great, I generally serve it with brown rice, or barley and the sauce compliments both grains. Yummy!!!!

      1. Yes but you’ll want to reduce the cook time so that they don’t dry out. Try LOW on 3 hours!

  6. These look soooo yummy!! Ive tried many of your reciepes that have all turned out incredible. Instead of pork chops I wanna use baby back ribs what if any changes do I have to make?

    1. So glad you’re enjoying my recipes! You can cut the ribs into sections, then pour the sauce over the ribs. Add to the slow cook and cook for 4 hours on high or 8 hours on low. After the ribs are done, you may want to transfer them to the oven to broil for a few minutes so that the sauce caramelizes and sticks to the ribs. Hope that helps!

    Yes, I tried it, was very curious how it would taste. Now, I am a vegan, so my family need to go through my tests, haha. The result was great! They loved it!     1. Yes that would work to add veggies! You could add them at the beginning, or halfway through if you prefer firmer veggies.

    I made this the other night. It’s a keeper:-) I cooked it for 4.5 hrs because my pork chops were a little thinner. I didn’t have the fresh parsley. Amazingly I did have the green onions on hand but I forgot to add them in the chaos of getting dinner on the table. There was plenty of sauce for six pork chops. I am always happy to find a recipe that doesn’t center around a cream based soup. Thanks!

  10. Do you think I could substitute garlic powder for the chopped garlic and how much if I do that? A friend is coming to stay for 5 nights and she can’t eat anything with garlic or onion. Maybe it would be best to just throw in 2 or 3 whole cloves of garlic and we’d get the flavor but I can remove them before we eat.

    1. You could try a 1/2 teaspoon of garlic powder, or I like your idea of just putting a few cloves in the slow cooker and removing them before serving!

    Hi Sara, thank you for this recipe!! I made this for dinner and it was delicious!! I don’t usually buy pork chops, but thought I’d give them a try and went online to try to find recipe, and stumbled on yours. I will definitely make this again. I used Sirracha ketchup instead of regular ketchup, and it gave it a hint if heat, which I loved. The hubby said “I scored!!!”, (meaning he got a wife that can cook yummy stuff.) 😊 Thank you!!!

    I got ready to make this and realized I didn’t have any soy sauce, so substituted teriyaki sauce instead. It turned out great, and so tender. Definitely will be making it again. Will try it with soy sauce next time. We used quinoa instead of rice as a base.

    I made this tonight for dinner and it was so good my husband actually uttered these words: “these are the best pork chops I’ve ever had”. And he is very hard to please.

    I had some beets I needed to use so I actually sliced them thin and added them in to the crock pot and it was surprisingly yummy! Also I added a dash of Apple cider vinegar and a dash of Worcestershire sauce. I don’t know if any of those things made a difference, but I will definitely be making this recipe again!

  15. Can I cook this on high for 2 hours instead of low for 4, or will that overcook the meat or ruin the flavor?

    1. I’m not sure if 2 hours is enough time to get the meat really tender. It certainly won’t hurt anything but the pork may be a little on the tough side.

    2. A similar recipe that I saw this morning on another blog recommended low, and that was with bone-in blade cut chops. The blogger cooked them twice, once on low, then on high. Even with more fat to keep them moist she said they didn’t come out as tender on high, so I would definitely use low for boneless chops.

      FWIW, I’ve always used low for lean meats like pork tenderloin and boneless chicken breast, because high is too rough on them.

    1. Yes, and it is awesome! Made them today for the second time. Put the pork chops on top of brown rice and drizzled the sauce over all. Delicious!
