Chicken is a staple for crock pot cooking, but did you know that pork chops are also a perfect protein for the slow cooker? These honey garlic pork chops come out so tender and flavorful that they’ll be sure to find a place on your regular dinner menu rotation.

How to make honey garlic pork chops

For this recipe you’ll want to use thick cut boneless pork chops. If you use a thin pork chop, you should reduce the cooking time so that they don’t dry out. My pork chops were about 1 1/2 inches thick. I prefer to brown my pork chops before I add them to the slow cooker, it just adds so much more flavor. If you’re in a hurry you can skip that step and the chops will still be delicious.

The sauce is made with ketchup, soy sauce, honey and garlic. At the end of the cooking process, a little cornstarch gets added to thicken the sauce. Be sure to serve your honey garlic pork chops over mashed potatoes or with rice or bread to soak up that amazing sauce!

I add a little chopped parsley at the end for a fresh flavor. If you don’t have parsley on hand, you can omit it, or substitute sliced green onions.

Ingredients 

  • 6 thick cut boneless pork chops
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 2 teaspoons minced garlic
  • 1/2 cup ketchup
  • 1/3 cup low sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons cornstarch
  • 2 tablespoons chopped parsley

Instructions 

  • Heat the oil in a pan over high heat. Season the pork chops generously with salt and pepper on both sides. 
  • Cook the pork for 4-5 minutes on each side until deep golden brown. 
  • Add the pork chops to the slow cooker.
  • NOTE: you can skip the browning process if you prefer and simply season the pork chops with salt and pepper then add them to the slow cooker.
  • In a small bowl, whisk together the garlic, ketchup, soy sauce and honey. Pour the sauce over the pork chops.
  • Cover the slow cooker and cook on LOW for 4 hours.
  • In a small bowl, mix the cornstarch with 1/4 cup cold water. Add the cornstarch mixture to the slow cooker.
  • Cook for 1 more hour or until sauce has just thickened and pork chops are tender. Sprinkle with parsley and serve.

Notes

  1. Boneless skinless chicken thighs can be substituted for pork chops.
  2. You can add some sriracha or chili flakes if you want a spicier meal.

  1. Can I bake in the oven? If so, what temperature and for how long. I will be using bone-in chops (not too thin, not thick).

    1. This recipe is really designed to be used in a slow cooker. The sauce will not necessarily thicken the same way in the oven. You could try stirring the cornstarch into the initial sauce mixture, then pour over pork chops and bake. I’d try 375 degrees F for about 25 minutes but that’s just an estimate since I haven’t tested this!

    Just a quick question….Before you add the cornstarch do you remove chops and mix it through the liquid and then put chops back in, or do you just pour it over the chops and leave for another hour (no stirring required)?

  3. I’m sure somebody else has asked, but how long would you cook 4 pork loin cuts that are maybe 3/4 of an inch thick? don’t want to risk overcooking.

    I have made this 3 times now… To the first time exactly as written and it was delicious. Second time I used garlic powder instead of minced garlic and skipped the cornstarch and it was just as amazing… This last time it’s actually in the Crock-Pot now using boneless chicken. This is one of my and my husband’s favorites and he’s picky! Thank you for an amazing recipe that will most likely be a regular in our home! And I agree Browning the meat first is a must!!!

    Thank you so much for sharing this easy but incredibly delicious recipe. I made it exactly as listed except I only had regular soy sauce. I browned the chops which were really thick boneless America’s cut. The whole neighborhood kept asking what was cooking (Florida so windows open today at 82). The chops were so tender I could cut them with a fork and the flavor was perfect with golden buttery mashed potatoes and garden fresh green beans. Thanks again. Love your recipes.

  6. I have butterfly pork loin center cut chops, I’m also making only 2, I’m going to cut the ingredients in 1/2 but would the cooking time be the same or should I be cutting down the time as well?

    1. Is it possible to do this with boneless pork joint? I’ve made these before with pork chops, absolutely lovely. I’ve now defrosted a pork joint, wondering if it’ll be ok.

    I have written twice but not received an answer I love the honey garlic pork chops, but can’t seem to figure a way not to over cook the pork. This should be easy; just cook it less, but then it’s not done. Also, if I open the cooker to check, then I have to add considerable time.

    1. I’m sorry, for some reason I haven’t received your messages! Are you using bone in or boneless pork chops? Have you tried subtracting 30 minutes from the cooking time?

  9. Hello to you. I realize having done the recipe twice and overcooking the pork each time that there must be a better way than what I am doing. The second time was better, and I am concerned about under cooking. I was told that if I raise the lid I have to add an hour of cooking, and I wonder if that is true.

    This is just a scrumptious recipe, and the other ways of preparing it that writers have suggested open up my thought, too.

    1. For more Asian flavor, I added 1 minced onion, 1 tsp sesame seed oil, and 1 tsp finely grated ginger root. Do not use powdered ginger HINT: Freeze ginger root. It makes it easier to grate.
