Hey there, how was your week? I’d like to say my week was awesome, but it was actually pretty awful. My 5 year old fell off the monkey bars and broke her elbow at the park on the 4th of July. It is so hard to see your child in that kind of extreme pain, and to make matters worse, the ER doctor told us she was going to need surgery. Luckily after taking her to be evaluated by a pediatric orthopedic surgeon we were told no surgery was needed; she’s in a cast for the next 4 weeks which is hard when you can’t get it wet and it’s hot out! She’s feeling much better though, and is back to her old self again, so hopefully the next few weeks will pass quickly so that she can resume her normal activities. I did not do a lot of cooking last week while tending to my injured girl, but I am back in action this week with some awesome recipes to try. Hope you enjoy the latest iteration of easy meals, have a great week!

Nice recipe list. I like the looks of those Greek Yogurt Cheesecakes.
Great news on the surgery – and that she is feeling better. Nothing worse than having your child injured or in pain. Have an awesome week! The recipes all sound fantastic
Thanks Tricia, I’m counting down the days until she’s back to 100%!
So sorry to hear about your daughter, thank goodness she is back to old self. Looks like you have some great meals planned for this week.
Thanks for the well wishes, I appreciate it!
