Ingredients

  • 1 tablespoon hot water
  • 1 tablespoon granulated sugar
  • 8 mint leaves
  • ounces white rum
  • 1 ounce lime juice
  • ounces watermelon juice or watermelon puree
  • 2 ounces club soda
  • mint sprigs, watermelon slices and lime wedges for garnish

Instructions

  • Place the sugar and hot water in a bowl. Stir until the sugar dissolves.
  • Place the mint leaves and sugar mixture in the bottom of a glass. Use a muddler and muddle everything together until the mint leaves are crushed.
  • Add ice on top of the sugar and mint mixture. Pour in the rum, lime juice and watermelon juice.
  • Pour in the club soda, then stir to combine.
  • Garnish with lime wedges, watermelon slices and mint sprigs if desired, then serve.

Notes

  1. You will need to use a muddler tool to pulverize the mint leaves for the most authentic flavor. Muddlers can be purchased at kitchen supply stores or online.
  2. This recipe makes one watermelon mojito. You can change the number of servings in the recipe card to suit the size of your group and the ingredient amounts will scale up accordingly.
  3. I find it easiest to use store bought refrigerated watermelon juice. You can also puree 1 cup of watermelon chunks in a blender and use that instead. Strain the puree before you add it to your drink.
