Coconut Mojito

This coconut mojito is a blend of lime juice, fresh mint, coconut rum and cream of coconut, all mixed with club soda for a refreshing cocktail. A tropical twist on the classic mojito recipe!

Ingredients

  • 2 teaspoons granulated sugar
  • 2 teaspoons hot water
  • 8 mint leaves
  • ounces coconut rum
  • 1 ounce lime juice
  • 2 ounces cream of coconut
  • 3 ounces club soda
  • mint sprigs and lime slices for garnish

Instructions

  • Dissolve the sugar in 2 teaspoons of hot water.
  • Place the mint leaves and the sugar syrup in the bottom of a glass. Use a muddler and muddle everything together until the mint leaves are crushed.
  • Add ice on top of the mint mixture. Pour in the coconut rum, lime juice and cream of coconut.
  • Add the club soda, then stir to combine.
  • Garnish with lime slices and mint sprigs if desired, then serve.

Notes

  1. Be sure to use cream of coconut, which is a mixture of coconut cream and sugar. Unsweetened coconut milk or coconut cream will not have the same results.
  2. You will need to use a muddler to crush the mint leaves for the most authentic flavor. Muddlers can be purchased at kitchen supply stores or online.
  3. This recipe makes one cocktail. You can change the number of servings in the recipe card to suit the size of your group and the ingredient amounts will scale up automatically.
