These air fryer chicken tenders are fresh chicken tenderloins coated in breadcrumbs, spices and parmesan cheese, then air fried until golden brown and crispy. A lightened up version of classic chicken fingers with less fat and just as much flavor.
1 1/4poundsraw chicken tendersalso sometimes called tenderloins
1/2cupall purpose flour
1 1/2teaspoonskosher saltplus more to taste
1/2teaspoonblack pepperplus more to taste
2eggs
3/4cupItalian style breadcrumbs
1cuppanko breadcrumbs
1/4cupgrated parmesan cheese
3tablespoonsbuttermelted
cooking spray
Instructions
Preheat the air fryer to 400 degrees F.
Place the flour in a medium sized bowl. Add 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Stir to combine.
Place the eggs in another medium bowl. Add 2 tablespoons of water and whisk until smooth.
Place the Italian style breadcrumbs, panko breadcrumbs, grated parmesan cheese and salt and pepper to taste in a medium bowl. Mix well.
Dredge each chicken piece in flour, then coat in egg, then roll in the breadcrumb mixture.
Repeat the process with all the chicken.
Drizzle the melted butter over the tenders, then spray the chicken with cooking spray.
Place the chicken in a single layer in the air fryer. You may need to work in batches.
Bake for 10-12 minutes, flipping halfway through the cooking time, or until chicken is cooked through and coating is brown and crispy. Serve immediately.
