These Hasselback sweet potatoes are thinly sliced yams that are coated in butter and olive oil and roasted to golden brown perfection. Add some sweet or savory toppings and you've got an easy yet elegant side dish!

Instructions
Preheat the oven to 400 degrees F. Line a sheet pan with foil, then coat the foil with cooking spray.
Place a sweet potato on a cutting board between two chopsticks. Slice the potato into 1/4 inch thick slices, the chopsticks will prevent you from cutting all the way through.
Repeat the process with the remaining sweet potatoes. Place the sweet potatoes on the sheet pan.
In a small bowl, whisk together the olive oil, butter, salt and pepper.
Brush the olive oil mixture all over the sweet potatoes, making sure to get some in between the slices.
Bake for 50-60 minutes until potatoes are tender and browned.
Add toppings of your choice such as chopped fresh herbs, a pat of garlic butter, brown sugar or pecans. Serve and enjoy.
Notes
Choose potatoes that are similar in size and shape so that they cook at the same rate.
Be sure to use a very sharp knife to make even slices in your potatoes. I typically use a smaller paring knife. I find that it’s more precise than a larger chef’s knife for this task.
