1/2 cup olive oil 1/3 cup soy sauce 1/4 cup lemon juice 1/4 cup Worcestershire sauce 1 tablespoon minced garlic 2 teaspoons Dijon mustard 2 teaspoons Italian seasoning 1 teaspoon black pepper 1/2 teaspoon salt 1/2 teaspoon onion powder
Place all the ingredients in a bowl or in a resealable bag. Mix the ingredients until thoroughly combined.
Add two pounds of skirt steak to the bowl or bag. Cover the bowl or seal the bag.
Marinate for at least 2 hours, or up to 8 hours.
Grill, sear or broil as desired. Let the steak rest for 5 minutes, then slice against the grain and serve.
I recommend a minimum of two hours of marinating time, but 6-8 hours is really ideal.
It's very important to let your steak rest for a few minutes after it's cooked. Be sure to slice it against the grain for the most tender end result.
This marinade can also be used for other cuts of beef such as London broil, flank steak or sirloin.
