Place the American cheese, salsa verde and half and half in a pan over medium heat. Cook, stirring occasionally, until melted and smooth.
Serve immediately, topped with pico de gallo if desired.

I typically use a mild green salsa in this recipe so that it's not too spicy for the kids, but if you prefer heat, go for a hot salsa! Alternatively, you can add minced pickled jalapeno slices to turn the heat up.
While this Mexican cheese dip is great on its own, I find that adding a topping of fresh pico de gallo really takes it over the top. You can either purchase pico de gallo or make my homemade pico de gallo.
You'll want to purchase a block of white American cheese at your grocery store deli counter - just ask for a pound of the cheese, not sliced.
