Ingredients

  • For the shrimp:
  • 1 pound extra large shrimp peeled and deveined
  • 2 tablespoons butter
  • 2 teaspoons minced garlic
  • 1/4 teaspoon cumin
  • 1/4 cup chopped cilantro leaves
  • 2 tablespoons lime juice
  • salt and pepper to taste
  • For the mango avocado salsa:
  • 1 cup diced mango
  • 1 cup diced avocado
  • the juice of 1 lime
  • 1/2 cup minced red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup minced red onion
  • salt to taste

Instructions

  • For the shrimp: Melt the butter in a large pan over high heat.
  • Season the shrimp generously with salt and pepper to taste.
  • Add the shrimp and cook for 3-4 minutes, stirring occasionally until shrimp are pink and opaque.
  • Add the garlic and cumin and cook for 1 minute more.
  • Stir in the lime juice and cilantro and serve with mango avocado salsa.
  • For the salsa: Combine all of the ingredients in a bowl and serve with the shrimp.
