Cabbage and Sausage Skillet
This cabbage and sausage skillet is a combination of smoked sausage, vegetables and savory seasonings, all cooked together to make a quick and easy dinner. A hearty low carb meal that always gets rave reviews!

1 tablespoon olive oil 1 pound smoked sausage such as kielbasa, sliced 1 tablespoon butter 1/2 cup onion chopped 1 tablespoon garlic minced 4 cups cabbage coarsely chopped 1 1/2 teaspoons Cajun seasoning salt and pepper to taste 1 tablespoon chopped parsley
Heat the olive oil in a large pan over medium high heat. Add the sausage and cook for 3-4 minutes per side or until golden brown.
Remove the sausage from the pan and cover to keep warm.
Melt the butter in the pan. Add the onion and cook for 5 minutes or until softened.
Add the garlic and cook for 30 seconds.
Place the cabbage, Cajun seasoning, salt and pepper in the pan.
Cook for 8-10 minutes or until cabbage is wilted. Stir in the sausage and cook for 1 more minute.
Sprinkle with parsley, then serve.
I typically use kielbasa as it's flavorful and readily available. You can use turkey or beef kielbasa, either will work just fine.
Make sure to wash and dry your cabbage before cooking it.
Chop the cabbage pieces to about the same size as your sausage slices.
