  • 3 medium Russet potatoes scrubbed and cut into 3/8 inch wide pieces
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chopped fresh parsley

  • Place the potato sticks in a bowl of cold water. Let the potatoes soak in the water for 30 minutes, then drain and pat dry with paper towels.
  • Preheat the air fryer to 380 degrees F.
  • Place the potatoes in a large bowl and add the vegetable oil, onion powder, garlic powder, smoked paprika, salt and pepper.
  • Stir well until the potatoes are coated in the oil and spices.
  • Spread the potatoes in a single layer in the air fryer; you may need to work in batches. Cook for 15 minutes, flipping halfway through the time, or cook for longer if needed until golden brown and crispy.
  • Sprinkle with parsley and serve.
