For the salad 4 cups cooked chicken breast diced into bite sized pieces 1/2 cup celery finely chopped 2 tablespoons red onion finely chopped 1 cup red grapes halved 1/2 cup pecans toasted and chopped 2 tablespoons fresh parsley leaves finely chopped For the dressing 3/4 cup mayonnaise 2 tablespoons sour cream 2 teaspoons lemon juice 1 teaspoon Dijon mustard 1/2 teaspoon sugar salt and pepper to taste
For the salad Place the chicken in a large bowl.
Add the celery, red onion, grapes, pecans and parsley to the bowl.
For the dressing In a medium bowl, whisk together the mayonnaise, sour cream, lemon juice, mustard, sugar, salt and pepper.
Pour the dressing over the chicken and vegetable mixture. Toss gently to coat, then serve.
