8 ounces cream cheese softened 1 1/2 cups corned beef diced or chopped 1 1/2 cups Swiss cheese shredded 1/2 cup sour cream 1/2 cup sauerkraut drained 1/4 cup Thousand Island dressing 2 tablespoons chopped parsley cooking spray
Preheat the oven to 425 degrees F. Coat a small baking dish or skillet with cooking spray. Place the cream cheese, corned beef, 3/4 cup Swiss cheese, sour cream, sauerkraut and Thousand Island dressing in a bowl. Stir gently until blended. Spread the cream cheese mixture into an even layer in your prepared dish. Top with remaining 3/4 cup of cheese. Bake for 15-20 minutes or until cheese is browned and dip is bubbling.
