1 tablespoon vegetable oil 1 pound boneless skinless chicken breasts cut into 1 inch pieces salt and pepper to taste 1 green bell pepper cored, seeded and thinly sliced 1 red bell pepper cored, seeded and thinly sliced 1 teaspoon minced garlic 2 teaspoons minced ginger 2/3 cup chicken broth 2 tablespoons sugar 2 tablespoons soy sauce 2 tablespoons rice vinegar 1 tablespoon cornstarch 1 1/2 cups fresh mango chunks
Heat the oil in a large pan over medium high heat. Place the chicken in the pan in a single layer. Season with salt and pepper. You may need to cook the chicken in batches. Cook the chicken for 4-6 minutes or until browned and cooked through. Repeat the process with any remaining chicken. Add the peppers to the pan with the chicken and cook for 3-4 minutes or until softened. Add the garlic and ginger to the pan and cook for 1 minute.
