This cucumber mango salad is the perfect simple side dish.

Ingredients

  • 1 1/2 cups of mango slices
  • 1 1/2 cups of cucumber slices
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • salt to taste
  • 1 red chile , thinly sliced (optional)
  • fresh mint for garnish (optional)

Instructions

  • In a small bowl whisk together the lime juice, olive oil and honey. Add salt to taste. In a medium bowl combine the mango and cucumber, add the dressing and toss to coat. Taste again for seasoning and stir in chiles if desired.

Make Ahead: Salad can be made up to 4 hours in advance.
