Irish Nachos

This recipe for Irish Nachos is potato chips layered with plenty of cheese and toppings. Potato nachos are a simple yet unique snack that's perfect for parties!

Ingredients

  • 4 cups kettle style potato chips
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked crumbled bacon
  • 1/4 cup finely chopped chives
  • 1/3 cup sour cream
  • 1/4 cup diced tomato

Instructions

  • Preheat the oven to 350 degrees
  • Place the chips on a sheet pan or in a pie plate.
  • Sprinkle the cheese evenly over the chips, then add the bacon on top of the cheese.
  • Bake for approximately 5 minutes or until cheese is melted,
  • Top with sour cream, tomato and chives and serve immediately.

Notes

  1. When cooking the nachos in the oven, make sure they are not too close to the upper heating element. You want at least 3 inches of space.
  2. For even cheesier nachos alternate layers of cheese and chips so that the bottom chips get plenty of gooey cheese!
  3. Make sure when you place the cheese on the chips it doesn't hang over the side of the pan. If the cheese hangs over the edge of the pan it might drip into the oven.
