Ingredients

  • 1 pound of peeled sweet potato chunks that have been boiled steamed or roasted until just tender
  • 1 tablespoon olive oil
  • 1 1/2 cups diced Smithfield Spiral Sliced Smoked Ham with Signature Glaze
  • 1 red bell pepper diced
  • 1 red onion diced
  • salt and pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 4 fried eggs

Instructions

  • Place the olive oil in a large skillet over medium high heat. Add the onion and cook for 3-4 minutes, stirring occasionally, until softened. Add the bell pepper and cook for an additional 2-3 minutes or until just tender
  • Add the ham and sweet potatoes and cook for 5-6 minutes, or until sweet potatoes are lightly browned. Season to taste with salt and pepper.
  • Place the eggs on top of the sweet potato mixture. Sprinkle parsley over the top and serve immediately.
