For the salad 3 cups sliced cucumbers seeds removed 2 cups cherry tomatoes halved 1/4 cup red onion thinly sliced 1 green bell pepper cored, seeded and diced 1/3 cup kalamata olives pitted and halved 1/4 cup fresh parsley chopped, plus more for garnish 1/3 cup feta cheese crumbled For the dressing 6 tablespoons olive oil 2 tablespoons red wine vinegar 2 teaspoons Dijon mustard salt and pepper to taste 1/4 teaspoon dried oregano 1/4 teaspoon garlic powder
For the salad Place the cucumbers, cherry tomatoes, red onion, green bell peppers, kalamata olives and parsley in a large bowl.
Pour the dressing over the vegetables. Toss gently to coat. Sprinkle the feta cheese over the salad.
Garnish with additional chopped parsley if desired, then serve immediately.
