Mediterranean Salad

This Mediterranean salad is a blend of tomatoes, cucumbers, bell peppers, red onion, olives and feta, all tossed together in a homemade dressing. A quick and easy side dish option that's perfect for parties and always gets rave reviews!

Ingredients

For the salad

  • 3 cups sliced cucumbers seeds removed
  • 2 cups cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1 green bell pepper cored, seeded and diced
  • 1/3 cup kalamata olives pitted and halved
  • 1/4 cup fresh parsley chopped, plus more for garnish
  • 1/3 cup feta cheese crumbled

For the dressing

  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • salt and pepper to taste
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder

Instructions

For the dressing

  • In a small bowl, whisk together the dressing ingredients.

For the salad

  • Place the cucumbers, cherry tomatoes, red onion, green bell peppers, kalamata olives and parsley in a large bowl.
  • Pour the dressing over the vegetables. Toss gently to coat. Sprinkle the feta cheese over the salad.
  • Garnish with additional chopped parsley if desired, then serve immediately.
