Grilled Mushrooms

These grilled mushrooms are button mushrooms threaded onto skewers then grilled to golden brown perfection and brushed with garlic butter. An easy low carb side dish option!

Ingredients

  • 1 pound button mushrooms cleaned and trimmed
  • 2 teaspoons olive oil
  • salt and pepper to taste
  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 2 teaspoons parsley minced

Instructions

  • Preheat an outdoor grill or grill pan to medium high heat.
  • Thread the mushrooms onto skewers. Brush with olive oil and sprinkle with salt and pepper.
  • Place the skewers on the grill. Cook for 4-5 minutes per side or until mushrooms are tender and browned.
  • Place the butter and garlic in a small bowl. Microwave in 30 second increments or until butter is melted. Stir in the parsley and salt and pepper to taste.
  • Brush the garlic butter over the mushrooms, then serve.

Notes

This recipe can also be made in the oven. Broil for 4-5 minutes per side.
