I happen to love brie cheese, whether it’s on a cheese plate, melted in a sandwich or stirred into pasta. But I have to say, my favorite way to enjoy this cheese is with a baked brie. The combination of fruit, nuts, cheese and pastry is simply irresistible!

To make baked brie you will need puff pastry, a wheel of brie cheese, raspberry jam, fresh raspberries, candied pecans and an egg.

How Do You Make Baked Brie?

Make this perfect savory and sweet baked brie recipe by placing a wheel of cheese in the center of a sheet of puff pastry. If you want to decorate the top of your brie with puff pastry designs, cut out shapes from a second sheet of puff pastry. Cut a thin slice horizontally off the top of the brie and spread jam on the top of the cheese. Place fresh raspberries and candied pecans on top. Wrap the puff pastry around the cheese and pinch the edges to seal it shut. Add any decorations and brush egg over the whole thing. After a quick trip in the oven, the cheese will get melty and delicious. Let it cool for a few minutes and serve the brie with crackers or apple slices.

Tips For The Perfect Baked Brie

  • You can use phyllo dough or crescent roll dough instead of puff pastry.
  • To cut decorations out of puff pastry, I used small leaf shaped cookie cutters. You can also just use a sharp knife to cut shapes.
  • You can buy pre-prepared candied pecans or make your own with this candied pecans recipe.
  • You can bake the brie on parchment paper for easy transfer of the brie from the baking sheet to a serving platter.
  • I recommend using a wheel of brie instead of a wedge of brie because the cheese is not held in by a rind in the wedge and may be messier than a wheel.
  • This dish is a perfect appetizer for holidays like Christmas, Thanksgiving or Easter.

Quick Tip

I recommend using fresh raspberries not frozen, as frozen berries will release a lot of liquid when baked.

Do you eat the skin of brie cheese?

You can eat the skin of brie cheese.  Some people like the flavor, others think it is a little too strong. Personally, I tend not to eat the rind on cold brie, but I like the rind on baked brie as it tends to counterbalance some of the sweeter elements.

Do you take the rind off brie before baking?

You can take the rind off the brie before baking it, but you do not need to. I like the flavor of the rind in baked brie and the rind tends to hold the shape of the cheese. If you remove the rind, watch out when you cut the warm brie as it may be a little more liquid.

What do you eat with baked brie?

You can eat practically anything with baked brie. Crackers and apples are very common. However, you could eat bread, toast, croutons, certain cookies, fruit, dried fruit or chips. Anything that tastes good with brie and can scoop cheese is a good choice. Use your imagination!

Can you overcook brie?

You can overcook brie. If you cook it too long, the puff pastry may burn or dry out. The cheese can also separate. Keeping the rind on the cheese helps the cheese cook up smooth and perfectly melted.

  • Sweet: You can use honey or maple syrup and nuts instead of fruit and jam.
  • Savory: You can make a savory version by sauteing onions and garlic and placing the caramelized onions and garlic on the cheese instead of the fruit and nuts. You can then fold the dough over the onions, apply the egg wash and bake as directed in this recipe.

Ingredients 

  • 1 sheet frozen puff pastry thawed, if you're planning to cut out designs for the top of your cheese, then thaw a second sheet for that
  • 8 ounce wheel brie cheese
  • 3 tablespoons raspberry jam
  • 1/4 cup fresh raspberries plus more for garnish
  • 1/4 cup candied pecans coarsely chopped
  • 1 egg beaten
  • cooking spray

Instructions 

  • Preheat the oven to 375 degrees F. Line a sheet pan with foil, then coat the foil with cooking spray.
  • Lay one sheet of puff pastry on the foil. If you're using a second sheet of pastry to cut out decorations, you can make your decorations at this time.
  • Cut a thin slice off the top of the brie. Spread the jam over the brie, then arrange the raspberries and chopped pecans on top.
  • Wrap the puff pastry around the brie, then pinch the edges to seal shut. Add pastry decorations, if you're using them.
  • Brush the egg all over the pastry. Bake for 20 minutes or until pastry is golden brown.
  • Let cool for 5 minutes, then serve with crackers and sliced apples.
