Bacon makes everything better, especially when it’s paired with potatoes! These potato wedges come out so crispy that they taste deep fried even though they’re actually baked. You can’t go wrong with bacon wrapped appetizer recipes like my bacon wrapped shrimp and bacon wrapped jalapeno poppers!

Potatoes are amazing in so many different ways, and they also happen to pair perfectly with potatoes. These bacon wrapped potatoes are a great way to enjoy the flavor of crispy french fries with the addition of smoky bacon. Bacon Wrapped Potatoes Ingredients

To make this recipe, you will need Russet potatoes, bacon, salt, and black pepper. You can garnish your potatoes with parsley and coarse salt, and I recommend serving them with ranch dip.

How Do You Make Bacon Wrapped Potatoes?

Preheat the oven, and line a sheet pan with foil. Coat the pan with cooking spray. Cut each potato into 6 wedges, then cut the bacon crosswise in half. Season the potatoes with salt and pepper. Wrap one slice of bacon around each potato wedge. Lay the potatoes in a single layer on the baking sheet. Bake, flipping halfway through the cooking process, until the potatoes are tender and golden brown, and the bacon is crispy. Serve immediately. Feel free to add garnishes such as fresh parsley and coarse salt, then enjoy!

Tips For The Perfect Dish

  • Be sure to cut your potatoes into even sized wedges so that they all cook at the same rate.
  • It’s best to avoid thick cut bacon for this recipe, as it will take a lot longer to get crispy.
  • Leftovers will stay fresh in an airtight container in the fridge for up to 3 days. Reheat leftovers in the oven until the bacon is crispy.
  • You can serve your bacon wrapped potatoes with a dipping sauce such as homemade ranch dressing, honey mustard sauce or blue cheese dressing.

Quick Tip

This recipe works well as an appetizer with toothpicks on each potato, or you can serve your potatoes as a side dish as a french fry replacement.

Is it better to boil potatoes before roasting?

You do not need to boil your potatoes before you roast them. The potatoes will get tender from the heat of the oven.

How do you keep roasted potatoes crispy?

The most important tip for crispy roasted potatoes is to not overcrowd the pan. There should be plenty of room for the hot air to circulate around the potatoes. If the potatoes are crowded on the pan, they will steam and will not get crispy.

Flavor Variations

These bacon wrapped potatoes are great as-is, but you can easily customize the flavors to suit your taste.

  • Potatoes: You can use sweet potatoes, Yukon Gold potatoes or red potatoes in place of the Russet potatoes.
  • Herbs: Instead of parsley, try adding a different type of fresh herb such as thyme or chives.
  • Bacon: No bacon on hand? You can also make this recipe by wrapping your potatoes in pancetta or prosciutto.
  • Seasonings: Feel free to add other seasonings to your potatoes such as paprika, onion powder, garlic powder, parmesan cheese, BBQ rub or Cajun seasoning.

You definitely need to try these bacon wrapped potato wedges, they’re really not any more difficult than making an oven fry but they’re SO much more flavorful. Ingredients 

  • 3 large russet potatoes scrubbed
  • 9 slices of thin bacon preferably center cut
  • cooking spray
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • chopped parsley and coarse salt for garnish optional
  • ½ cup ranch dressing optional

Instructions 

  • Preheat the oven to 450 degrees F. Line a sheet pan with foil, coat the foil with cooking spray.
  • Cut each potato into 6 wedges. Season the potatoes with salt and pepper.
  • Cut the bacon slices in half crosswise. Wrap each piece of potato with a piece of bacon. Place the bacon wrapped potatoes on the sheet pan.
  • Bake for 15 minutes, then flip and bake for an additional 15 minutes or until potatoes are golden brown and bacon is crispy.
  • Serve immediately. Garnish with chopped parsley and coarse salt if desired, and with ranch for dipping.

Notes

  1. Do not use thick cut bacon, as it will take a lot longer to get crispy.
