White Queso Dip

Ingredients

  • 1 pound white American cheese cubed
  • 1 cup half and half
  • 1/4 cup salsa verde

Instructions

  • Place the American cheese, salsa verde and half and half in a pan over medium heat. Cook, stirring occasionally, until melted and smooth.
  • Serve immediately, topped with pico de gallo if desired.

Notes

  1. I typically use a mild green salsa in this recipe so that it's not too spicy for the kids, but if you prefer heat, go for a hot salsa! Alternatively, you can add minced pickled jalapeno slices to turn the heat up.
  2. While this Mexican cheese dip is great on its own, I find that adding a topping of fresh pico de gallo really takes it over the top. You can either purchase pico de gallo or make my homemade pico de gallo.
  3. You'll want to purchase a block of white American cheese at your grocery store deli counter - just ask for a pound of the cheese, not sliced.
