This pineapple coconut smoothie recipe is a tropical fruit delight that's both healthy and refreshing. It's dairy free, vegan and only contains 4 ingredients.
Place the coconut milk, banana, pineapple and coconut in a blender.
Blend until completely smooth.
For optional garnishes, dip the rim of 2 glasses into water and then into a plate of coarse sugar. Pour the smoothie into the glasses and place a mint sprig into each glass. Place a wedge of pineapple and lime onto the rims of the cups.
Notes
You can use coconut milk or almond milk for this recipe, whichever you prefer.
I typically use my blender at a high setting to puree the pineapple and banana chunks.
If you want a thinner smoothie, feel free to add a little extra coconut milk.
