I am a huge seafood fan, and am always looking for new quick and easy preparations. I always keep a bag of cooked shrimp in the freezer, it’s so convenient to have on hand to thaw and use in salads, stir fries and appetizers. This shrimp ceviche is super flavorful and can be made in just minutes. It’s a great dish for days when you want a meat-free meal or appetizer without a lot of fuss.
This shrimp ceviche is a combination of shrimp and veggies flavored with Clamato®, LA MORENA® jalapeno peppers, lime juice and cilantro. You can get all the ingredient to make this dish at your local Walmart, I found Clamato® in the juice aisle and LA MORENA® peppers in the Mexican food area.
The great part about this recipe is that all you need to do is stir together the ingredients, then refrigerate until ready to eat! I like to use LA MORENA® peppers in my cooking because they’re always high quality and are perfect for seafood and vegetarian meals, especially during Lent. I like to eat this ceviche as a starter or a light meal. I put out tortilla chips or crackers to serve alongside the ceviche, and it’s a lways a hit! This dish is always on my dinner table during Lent season. - 2 pounds shrimp cooked
- 1 small red onion thinly sliced
- 4 pieces LA MORENA® sliced jalapeños minced
- 1 cucumber peeled, seeded, thinly sliced
- 1/2 bunch cilantro finely chopped
- juice of 2 limes
- 1/2 cup Clamato® your favorite variety
In a bowl, combine shrimp, onion, jalapeño, cucumber, and cilantro. Add lime juice and Clamato®; toss to mix well. Chill in refrigerator 20-30 minutes.
Serve ceviche cold with tostadas or soda crackers.
